Sausage and Peppers

Ingrédients

1 lb Premio sweet italian sausage

1 green pepper, sliced

1 red pepper, sliced

1 large onion, sliced

3-4 cloves garlic, minced

1 can 15oz diced tomatoes, drained

2 T olive oil

Salt and black pepper

1 t italian seasoning (Andrew Zimern tuscan)

Fennel seed (just a little)

Red pepper flakes (easy does it)

Fresh basil and/or fresh parsley (optional)

Instructions

1. Brown the sausage

Heat 1 T olive oil in a large skillet over medium heat. Add sausages and cook until browned on all sides, about 8-10 minutes. Remove and set aside.

2. Cook peppers and onions

Add remaining oil to the skillet. Cook onions and peppers for 8-10 minutes until soft and lightly carmalized. Add garlic and cook 1 more minute.

3. Combine

Slice sausge into chunks or angled slices, return sausage to the pan, add tomatoes. Season with italian seasoning, salt, pepper, fennel seed and red pepper flakes.

4. Simmer

Cover and smmer 10-15 minutes until sausages are fully cooked and flavors combine. Top with fresh herbs.
