Ingrédients

2 boxes of Jiffy cornbread mix

1 cup of sour cream

2 cans of creamed corn

2 eggs

1 lb ground beef

1 lb chorizo

1 container Queso (15oz)

1/2 Chopped onion and 2 bell peppers if desired

1 can of red enchilada sauce (15-19oz)

2 cups of quesadilla cheese

1 cup of sharp cheddar

Taco seasoning

Whisk together the cornbread mix, sour cream, corn and eggs. Spread it into a greased 9 x 13 baking dish. Bake at 400 for 30-35 mins.

Cook down peppers/onions for 6-7 min on medium heat. Add ground beef/chorizo and season with taco seasoning. Once cooked, put your enchilada sauce in. When the cornbread is finished, use a fork to poke holes across the top. Pour the meat mixture on and then add a layer with the Queso. Sprinkle cheese on top and add additional taco seasoning.
