Coconut Cream Pie Blended Chia Pudding

Ingrédients

Here’s what you need:

4 tbsp chia seeds

1 cup greek yogurt

1/2 large ripe banana

3 tbsp unsweetened shredded coconut

1/2 tsp vanilla extract

1/3–1/2 cup coconut milk*

Optional: 1 tbsp maple syrup for added sweetness

Toppings: greek yogurt, toasted coconut flakes

Instructions

Place all ingredients in a blender, starting with 1/2 cup of milk. Blend until fully combined and the chia seeds are mostly blended smooth. Transfer to a bowl and refrigerate for at least 30 minutes to overnight to set. Once set, add the additional milk to desired thickness. Top with greek yogurt and toasted coconut flakes if desired. (Recipe makes 2 servings)

i use a non dairy milk such as Coconut Malk or Califia Organic Coconut Milk, or use canned coconut milk for a more decadent flavor)
