Did you know that you can make a cheat's malt loaf out of breakfast cereal...my mum taught me this trick when I was a kid and I've been baking this ever since...
This is one of those recipes that everyone made in the 80's. It's sticky and sweet and perfectly gooey.
Just spread slices with a thick layer of butter when it's still warm and eat it with a big mug of tea.
This is one of those really comforting, really nostalgic Sunday afternoon bakes, that you will always feel happy you've made.
I have written up the recipe for this below - let me know in the comments if this is your kind of cake! A x
100g All Bran (or own brand equivalent)
A mug of black tea (250ml)
200g self raising flour
200g light brown sugar
200g dried mixed fruit
1 tbsp treacle
1 tsp baking powder
1 egg beaten
Instructions
Place the teabag in a mug and pour over boiling water. Leave for 10 minutes, before removing the teabag
Heat the oven to 180C fan
Add the All Bran to a bowl and pour over the tea. Give it a stir and leave for a few minutes until the cereal has soaked up the tea. Give it a good stir until you have an even mush!
Add the flour sugar, treacle, mixed fruit, baking powder and beaten egg.
Beat together with a wooden spoon until you have a thick cake batter.
Tip into a lined or greased baking tin and bake in the oven for 50 minutes or until cooked through. Slide a knife into the centre and if it comes out clean it's cooked.
Leave to cool in the tin for 15 minutes, before placing it on a cooling rack. Cut into slices when still warm and spread with butter!
