Recipe: Creamy Garlic Parmesan Chicken

1lb chicken breast, sliced into halves
1 cup chicken broth
1/4 cup heavy cream
1/2 cup grated Parmesan
1 bulb garlic
1/2 lb green beans
2 tbsp olive oil, for garlic bulb
1 tsp olive oil, for cooking chicken
2 cups cooked mashed potatoes (I used microwaveable mashed potatoes)
3/4 cup flour
Garlic powder
1/2 tsp cornstarch
1/4 tsp Italian seasoning
Salt and pepper, for taste
For topping: chopped chives
Instructions
Preheat the oven to 350F
Chop the head of the garlic off.
Add it into a coquette. Pour olive oil overtop. Put into the oven for 45 minutes.
On a plate or small pan, add flour, salt, pepper and garlic powder. Mix around. Chop the chicken into halves and pound with a mallet to thin.
Drench each chicken breast in the flour mixture. Set on a plate aside.
Add the chicken breasts onto the pan and flip when browned on the other side. Let cook until 165F internally.
On a separate pan, add olive oil and green beans. Cook on medium heat for about 8 minutes, or until fully cooked
Remove the chicken from the pan and turn the heat down to low/ medium. Add in chicken broth, garlic confit, cream, 1/2 tsp cornstarch, Parmesan, salt pepper and Italian seasoning. Let simmer for about 4-5 minutes, or until thickened. Add the chicken back in and baste the sauce over the chicken with a spoon.
Heat the microwaveable mashed potatoes.
Serve the mashed potatoes. Add the chicken and green beans on top.
Pour the sauce from the pan over the chicken. Top with chives. Serve and enjoy!
