Ingrédients

Use 8 lemons; use veggie peeler to peel long strips of peel from lemons

Turn over and scrape pith off with knife

Cut into strips 1/4”

Put into pot with water and boil down Blend

Dump water out and add new water and bring to a boil; do this 2-4x; Amy says 2-3x

For the final boil, use 2 c sugar and 2 c water and boil for 10 mins

Strain; reserve lemon simple syrup

Toss zest with sugar; put on small sheet pan lined with parchment to dry

Coat with more sugar and pinch salt
