You’ll need:
1 cup almond flour
1/3 cup pure maple syrup (or sugar free version , or honey)
1/2 cup peanut butter or your choice of nut butter (I used organic creamy peanut butter)
Instructions
In a bowl, mix together the almond flour, maple syrup, and nut butter.
Roll the mixture into teaspoon-sized balls and place them on a baking sheet. Pair up two balls and press them together gently.
Use a fork to press down on each paired ball, creating a hatch pattern on top.
Bake for approximately 10-12 minutes at 350°F
175°C).
Once baked, remove from the oven and allow to cool completely.
Once cooled, spread additional nut butter on the backside of one cookie and sandwich it together with another to form a complete cookie.
