Red Pesto Sausage Pasta

Red Pesto Sausage Spaghetti Recipe:

85g dry weight spaghetti
2 chipolata sausages
1/2 onion
100ml chicken stock
25g red pesto
1tbsp tomato purée
30g soft cheese
2tsp garlic purée
1tsp mixed Italian herbs, basil, salt and pepper
Instructions
Start by frying off your onion in a pan with the sausage, until the sausage browns through. Add in the garlic purée and the seasoning. In a separate pan, cook your spaghetti.
Once the sausage is browned, add in the red pesto and stir into the sausage and onion. Then, pour in the chicken stock and tomato purée and leave on a low to medium heat to simmer.
When the spaghetti is cooked, add to the pan with a spoonful of pasta water and toss in the sauce. Finally stir through the mascarpone cheese until a nice thick creamy sauce has formed.
