Pecan Cinnamon Roll Mini Tarts

Ingrédients

1 17.5 oz can cinnamon rolls, uncooked

1/2 cup fisher® pecan halves, chopped

2 tbsp unsalted butter, room temperature

1/2 cup packed light brown sugar

1/3 cup corn syrup

2 tsp vanilla extract

1 whole egg

Instructions

1. Preheat oven to 350°F.

2. Take a single roll and place over a muffin tin hole. Press down with a glass to give it a hollow cupcake shape. Repeat with the remaining cinnamon rolls.

3. Fill the cinnamon rolls with balled up aluminum foil and bake for 5 minutes. Remove the foil and press down dough if needed.

4. Add butter, sugar, corn syrup and vanilla to a pot and heat up at medium-high heat until the sugar melts, about 5 minutes. Add the egg and pecans. Mix well, remove from heat and let cool.

5. Fill the cinnamon roll shells with pecan filling.

6. Bake for 10 minutes, until crust is golden and the top part of the filling is set. Let cool for 15 minutes, serve with whipped cream and enjoy!
