Lemon Curd

Ingrédients

3 eggs

1/3 c sugar

zest of 1 lemon

1/2 c strained lemon juice (2-3 lemons)

6 tbsp unsalted butter (cut in small pieces)

1/4 tsp vanilla

Instructions

In medium saucepan whisk together eggs, sugar & zest. Cook over medium heat whisking until mixture is thickened & simmer gently for a few seconds.

Scrape curd into a bowl & stir in vanilla.

Let cool, cover & refrigerate to thicken. May be made several days in advance.
