Instructions

Preheat oven to 400 °F / 200 °C. Line a small baking sheet or pizza pan with parchment paper.

Blend the cottage cheese until smooth. (1/4 c)

Add 1 egg, 1/2c mozzarella, 1/4c almond flour, 1/4 tsp baking powder, salt, and any seasonings. Mix until a thick batter forms.

Pour onto the prepared sheet and spread into a 1/4 inch thick circle (about 6–7 inches across).

Bake for 12–15 minutes until set and lightly golden.

Remove, add your sauce, cheese, and toppings. Return to oven and bake another 6–8 minutes until the cheese melts.

Let cool a couple of minutes before slicing

Let me know if you make it!! This recipe also doubles as a wrap! Less almond flour keeps it softer.
