Apple Fritter Cookies

Ingrédients

2 cups all-purpose flour

1/3 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 large eggs

1/2 cup whole milk

2 teaspoons vanilla extract

2 tablespoons unsalted butter melted

11/2 cups diced honeycrisp apples

Glaze:

1 cup powdered sugar

2-3 tablespoons milk

1/2 tsp vanilla extract

Instructions

Preheat oven to 375°F and line a baking sheet with parchment paper.

Dice apples into 1/4- to 1/2-inch cubes and set aside.

In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

In a separate bowl, beat eggs until foamy. Add milk, vanilla, and melted butter; whisk until combined.

Pour wet ingredients into dry ingredients and gently fold until just combined. Do not overmix.

Next, fold in diced apples.

Scoop batter using an ice cream scoop, leaving space between each.

Bake for 14–16 minutes or until golden brown and a toothpick comes out clean.

While cookies cool, whisk powdered sugar, milk, and vanilla until smooth and drizzle over warm fritter cookies.
