Mom's Hi-Rise Apple Pancakes

1 apple
2 tsp lemon juice
2 Tbsp sugar
3 eggs
1/2 cup & 2 Tbsp flour
1/2 cup & 2 Tbsp milk
5 Tbsp butter
Instructions
Preheat oven to 425 degrees. Cut apples in slices and toss with lemon juice and sugar. Combine eggs, flour and milk in mixing bowl; mix well. Leave batter slightly lumpy. Heat butter in heavy skillet until foamy. Remove from heat – add batter. Place in oven for 25 minutes until pancake is puffed and golden brown. The apples may be added before or during baking. Remove carefully, fold slightly – sprinkle with powdered sugar.
