Pecan Pie Cobbler

1 ½ cups 1.1 GF flour (or all-purpose)
1 tbsp baking powder
½ tsp ground cinnamon
½ cup sugar
1 tsp vanilla extract
½ tsp kosher salt
8 tbsp cold butter
¾ cup buttermilk
1 cup Fisher pecans (chopped)
1 ½ cups corn syrup
2 tsp vanilla extract
¼ tsp ground cinnamon
3 eggs (room temp)
¾ cup light brown sugar (packed)
2 cups Fisher pecans (chopped)
⅛ tsp ground allspice
½ tsp kosher salt
Instructions
Preheat oven to 375°F. Butter a 7x10 baking dish (at least 2 ½” high).
In a large bowl, mix all the Pecan Pie Filling ingredients together and pour into the baking dish.
In a separate bowl, mix the Cobbler dry ingredients. Cut the cold butter into the dry mixture using a pastry cutter until pea-sized crumbs form.
Add the buttermilk and mix until incorporated.
Scoop equal-sized portions of the cobbler dough on top of the pecan pie filling.
Bake for 40-45 minutes until golden and set.
Remove and enjoy!
