Almond Croissant Blondie

Ingrédients

With four layers of frangipane and an almond blondie base, these might be a new favorite all time bake (and I think they’ll be yours too). I used @RisingStarBaking organic vanilla bean paste for smooth vanilla notes.

Frangipane

4 tbs softened butter

1/2 cup sugar

1 egg

1 tsp Rising Star organic vanilla bean paste

1/2 tsp almond extract

Pinch of salt

1 1/4 cup almond flour

Base

1/2 cup softened butter

3/4 cup brown sugar

1 egg

1 tbs Rising Star organic vanilla bean paste

1/2 tsp almond extract

1 1/4 cup all purpose flour

1/3 cup almond flour

1/2 tsp baking powder

Big pinch salt

Toppings:

Sliced almonds

Powdered sugar

Flakey sea salt

Instructions

Preheat oven to 350 degrees. Line an 8x8 baking pan with parchment paper.

Mix together all the frangipane ingredients in a small bowl and set aside.

In a medium sized bowl, mix together softened butter, brown sugar, Rising a star Vanilla Bean Paste, and almond extract.

Stir in both flours, baking powder, and salt.

In your 8x8 pan, Layer 1/2 base dough, 1/2 frangipane, other half base dough, then rest of frangipane to top. Sprinkle on sliced almonds.

Bake 40-45 minutes until almonds are toasted and toothpick comes out mostly clean.

Let cool completely then sprinkle with flakey sea salt and dust on powdered sugar.
