Ingrédients

1 cup chopped onion

4 cloves garlic, minced

4 cups low-sodium vegetable broth

1 cup each: chopped carrots, rutabaga, parsnips, peeled yellow potato, turnip

1 cup chopped peeled apple (1 medium)

1 tsp ground turmeric

2 Tbsp apple cider vinegar

¼ tsp cayenne pepper

¼ tsp ground nutmeg

Optional toppings: shredded apple, chopped parsley, sliced scallions

Instructions

Sauté onion and garlic in the Instant Pot until fragrant, adding splashes of broth as needed. Add remaining broth, root veggies, apple, and turmeric. Pressure-cook for 5 minutes, then let release naturally. Blend until silky, stir in vinegar, cayenne, and nutmeg, and finish with your favorite fresh toppings.
