BEST Homemade Cheese Sauce for Mac and Cheese

2 Tablespoons unsalted butter
2 Tablespoons all-purpose flour
2 cups whole milk, room temperature
2 cups freshly shredded sharp cheddar cheese*
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon ground mustard
1/4 teaspoon paprika
Salt to taste
Black pepper to taste
Instructions
Start by melting the unsalted butter in a saucepan over medium heat. Once it's melted, add the all-purpose flour and whisk continuously until smooth to create a roux, about 1 to 2 minutes.
Slowly pour in the milk while continuing to whisk. This will help prevent lumps from forming in the sauce. Cook this mixture, stirring frequently, until it starts to thicken, about 5 minutes.
Turn down the heat down to low, and then add the shredded sharp cheddar cheese to the saucepan. Keep stirring until all the cheese has completely melted into the sauce.
Add the garlic powder, onion powder, ground mustard, and paprika to the sauce. Stir well to incorporate all the spices.
Season with salt and black pepper according to your taste preference. Give the sauce one final stir to make sure everything is well combined.
Remove the saucepan from heat and let the sauce sit for a couple of minutes before pouring it over your cooked macaroni.
