Ingredients

1 - 9-inch single pie crust (see recipe)

- 8 ounces bacon (approximately 6 slices)

- handful of chopped ham

- 1 large shallot, minced

- 1 teaspoon crushed red pepper flakes

- 4 large eggs

- 1 1/2 cups half-and-half (or 3/4 cup milk and 3/4 cup heavy cream)

- 2 tablespoon mayo

- 1 teaspoon salt

- 1 teaspoon fresh ground black pepper

- 1 teaspoon grated nutmeg

- 1/2 teaspoon cayenne

-4 ounces Gruyère cheese, grated (about 1 cup) (feel free to substitute to Swiss or other favorite cheese)

- 1/4 cup Parmesan, grated

1 tablespoon chives, or thin sliced green onions (optional)

Instructions

Prepare pie crust. Preheat oven to 375. Bake crust for 5-6 minutes.

Chop bacon and fry until cooked. Set aside. Leave about a tablespoon of bacon grease in pan and cook chopped shallot until translucent. Add in red pepper flakes.

In a bowl, combine eggs, half-and-half, mayo, salt, pepper, nutmeg and cayenne. Whisk until combined

Place ham, bacon, shallot, and shredded cheese (Gruyere or cheese of choosing) on top of crust. Pour mixture over. Sprinkle with parmesan cheese.

Bake for 40-45 minutes or until golden brown. Use knife to check if cooked all the way through. You may want to cover outer edge of crust halfway through if starting to burn.

Notes

Fell free to mix it up and add whatever meat and cheeses you would like.
