2 (10 3/4 oz) cans of cream of chicken soup
1 cup chicken broth
4 chicken breasts cooked and cubed
4 cups cooked long grain rice
1 (9 1/2 oz) can chow mein noodles
3 medium tomatoes, sliced
1 cup chopped celery
1/2 cup chopped green pepper
1/2 cup chopped green onion
1 (20 oz) can pineapple chunks
1 cup grated cheddar cheese
1/2 cup slivered almonds
1/2 cup coconut
1 (2 oz) jar pimentos, drained and diced
Instructions
Combine soup and chicken broth in a medium saucepan to make gravy. Stir to blend. Add chicken and simmer 8-10 minutes. On individual serving plates, layer rice, chow mein noodles, chicken, and gravy. Add tomatoes, celery, green pepper, and green onion. Top with pineapple, cheese, more chicken and gravy, then almonds, coconut, and pimentos.
