Mashed Potatoes

2 lbs russet potatoes
1/2 cup whole milk
4 tbsp butter
2 tsp salt
Salt (to taste)
Pepper (to taste)
Parsley or chives (for garnish)
Instructions
1. Peel the russet potatoes. Using a sharp knife quarter them by first cutting them in half then cutting those pieces in half as well.
2. Add the cut potatoes to cold water in a large pot. Salt the water with 2 teaspoons of salt. Bring the water to boil over high heat and allow them to cook for approximately 15 minutes.
3. While the potatoes are cooking, add 1/2 cup of milk/cream and 4 tablespoons of butter to a small saucepan. Set the heat to low and warm the milk and melt the butter. Stir occasionally. When the butter has melted, reduce to warm.
4. When the potatoes are done, remove from the heat and drain. Return the potatoes to the warm pan.
5. Using a potato masher or hand mixer begin to mash the potatoes. Add half of your milk butter mixture to the pan and continue to mash.
6. When it’s incorporated, add the remaining milk butter mixture and continue to combine using the potato masher or hand mixer.
7. Using a spoon or fork, give the potatoes a taste and add salt and pepper to your liking.
8. To serve, transfer to a serving bowl and optionally garnish with some chopped parsley or chives.
