Lemon Olive Oil Loaf

2 cups (200g ) ground almonds
1/4 cup (60ml) extra virgin olive oil
2 eggs
1/4 cup (60ml) lemon juice
Zest of 1 lemon
2-3 Tbsps honey
1 tsp lemon extract- optional
1/2 tsp baking powder
1/2 tsp baking soda
Instructions
Mix all the ingredients together in a bowl.
Pour into a lined 1lb loaf tin.
Bake at 180 degrees C for 25 minutes.
For the last 5 minutes cover in foil to prevent the top becoming too dark.
