Crispy Chicken & Pesto Penne

2 boneless skinless chicken breasts
salt & pepper
flour
2 eggs
Italian seasoned bread crumbs
olive oil
garlic
1/2 cup pesto
3/4 cup heavy cream
1/4 cup chicken broth
12 oz penne pasta
shredded parmesan
Instructions
boil noodles according to package directions
slice chicken breasts in half lengthwise, and pound to thin
season both sides with salt & pepper
dredge chicken in flour, then egg wash, then bread crumbs
heat olive oil in a large sauté pan
cook chicken on both sides until crispy golden brown and internal temperature of 165°F, remove from pan
add garlic to pan and sauté for 1 minute
mix in pesto, heavy cream, and chicken broth, and simmer until bubbly
mix in cooked noodles and grated parmesan
serve pasta and chicken with additional parmesan and fresh basil
