Creamy Garlic & Herb Crispy Chicken Gnocchi

1 tbsp oil (from the sundried tomato jar)
1 red onion, finely diced
350g (raw) diced chicken breast
1 crushed garlic
1 tbsp garlic Italian seasoning
1 tbsp mixed herbs
90g sundried tomatoes
90g cream cheese
50ml water
50g mozzarella/ cheese mix
500g gnocchi
Chopped parsley
Optional parmesan for topping
Instructions
Airfry your gnocchi with some oil from the sundried tomato jar for around 15 minutes on 180°C or until crispy.
Fry off the onion with some salt then add the chicken and garlic in a pan until softened and cooked through.
Add the herbs, sundried tomatoes and cream cheese along with 40ml water.
Stir in the cheese, crispy gnocchi and a sprinkle of parsley.
Serve up and top with more parsley and parmesan.
