Jalapeños Stuffed Chicken

Ingrédients

For the chicken:

  • 4 chicken breasts

  • Toothpick/cocktail stick

Seasoning:

  • 1 tsp salt, black pepper, paprika, red chilli flakes, garlic powder

For the cream cheese mixture:

  • 1 tbsp olive oil

  • 1 white onion, thinly sliced

  • 200g baby spinach

  • 1 tsp chopped garlic

  • 250g cream cheese

  • 50g grated mozarella

  • 50g grated parmesan

  • 2 tsp chopped jalapeños

Seasoning:

  • 1/2 tsp salt, pepper

  • 1 tsp garlic powder, onion powder, dried oregano, red chilli flakes, paprika

For the potatoes:

  • 8-10 baby potatoes

  • 3 tbsp olive oil

  • 1/2 lemon, juiced

Seasoning:

  • 1 tsp salt, chilli powder, garlic powder

Instructions

  1. Start by sautéing onions in olive oil for 5 mins, add spinach, your seasonings and chopped garlic and cook for another 5. Put it aside to cool down.

  2. Mix it with cream cheese, mozzarella, parmesan and chopped jalapeños

  3. Butterfly each chicken breasts by slicing it down the middle, but dont cut all the way through

  4. Season them on both sides and stuff each with the cream cheese mixture. Between 2-4 tsp depending on the size

  5. Then use toothpicks to secure each and transfer to an ovenproof dish. I use a skillet which is why it looks like a pan

  6. For the potatoes, you wanna boil baby potatoes for 10 mins, drain them and then add olive oil, lemon juice, your spices, mix it around and add them to the chicken

  7. Bake it all the oven for 30 mins at 210C and that’s it!
