Perfect Shallot Vinaigrette

Ingrédients

1 medium shallot, minced (about 3 tablespoons)

2 tbsp. vinegar (such as white wine, apple cider, champagne, or red wine)

2 tsp. Dijon mustard

1/3 c. extra-virgin olive oil

Kosher salt

Freshly ground black pepper

Instructions

In a medium bowl, whisk together shallot, vinegar, and mustard. Slowly stream in olive oil, whisking constantly, until mixture is smooth and emulsified.

Season to taste with salt and pepper.

Vinaigrette will keep, tightly covered in the refrigerator, for about a week.
