Buffalo Chickpea Scoopable Salad

Ingrédients

1 can chickpeas

1 can white beans

1 can corn

1 cucumber

3 red bell peppers

1/2 a red onion

1 1/2 cups finely chopped cabbage

2/3 cup reduced fat feta cheese

Salt and pepper to taste

1 tsp garlic powder

1 tsp onion powder

Dressing

1/2 cup nonfat plain Greek yogurt

1/3 cup buffalo wing sauce

2 tsp ranch seasoning

2-3 tbsp Unsweetened almond milk to thin (plus more if needed)

Instructions

Drain and rinse beans and corn then add them to a large bowl.

Chop all your veggies (highly recommend a veggie chopper mines on my stories), then add them to the bowl along with feta, season with salt, pepper, onion and garlic powder.

Whisk together dressing ingredients adding more milk as needed if too thick. Pour over salad and toss until well combined.

Store leftovers in the fridge for 3-4 days!
