Flourless Chocolate Cake (gf / Df) ✨ the Perfect Cake for Yo

12 oz dark (70-85%) chocolate, broken into chunks
½ cup olive oil
1 cup coconut sugar
½ tsp salt
1 tsp vanilla extract
6 large eggs, separated
1 tbsp cocoa powder, for dusting the finished cake
Instructions
Preheat oven to 350°F. Grease a 9 inch baking round then place a sheet of parchment paper onto the greased surface and form it to the shape of the baking round by making little folds all the way around.
Add chocolate to a double broiler or a heat safe bowl over a pot of water. Melt chocolate over medium heat, being careful to stir regularly to prevent scorching.
Remove from heat once chocolate is melted and set aside to cool for 5 minutes while separating eggs. Add olive oil, egg yolks, sugar, salt and vanilla to your melted chocolate and whisk well.
Place egg whites in a large bowl then whip them on high speed with a stand up or hand mixer until stiff peaks are formed. Be careful not to over whip or the egg whites will separate, you just want to beat them long enough for the whites to begin holding their shape.
Fold half of your egg whites into your chocolate mixture until batter is uniform then add the second half and continue folding until the batter is nice and glossy.
Pour the batter into your parchment lined baking round and bake for 40 minutes until the top is crackly and dry looking. It should collapse some in the center as it cools.
Dust with cocoa powder to finish.
