Chili Lime Agave Chicken – Grilled Chicken

2 lb chicken thighs, boneless
MARINADE
Zest and juice of 1 lime
2 TBSP soy sauce
2 TBSP neutral oil
2 cloves garlic, minced
1/2 tsp grated fresh ginger
CHARRED CORN & ZUCCHINI SALAD
5 ears corn, husks pulled back
3 zucchinis, halved
1 red onion, chunked & skewered
Olive oil, for brushing
Garlic salt, to taste
1/4 C cilantro, chopped
Juice of 1 lime
CHILI-LIME AGAVE SAUCE
1/4 C agave syrup
Juice of 1 lime
2 tsp chili powder
2 cloves garlic, chopped
1 TBSP soy sauce
2 tsp crushed red pepper flakes
3 TBSP butter
Kosher salt, to taste
GARNISHES
Fresh cilantro
Lime wedges
Instructions
STEP 1: MARINATE
Mix marinade and coat chicken. Chill for 1–4 hours.
STEP 2: GRILL
Grill chicken over medium heat 12–15 minutes, or air fry at 400°F for 25 minutes. Oven option: 30 minutes, flipping halfway.
STEP 3: VEGGIE
Oil and season veggies. Grill until charred. Chop and toss with lime juice, cilantro, and salt.
STEP 4: SAUCE
Sauté garlic in oil. Add lime juice, soy sauce, butter, chili powder, red pepper, and agave. Simmer to thicken, then coat chicken.
