Finnish Cardamom Bread/Pulla/Nisu

1 1/2 cups milk
1 1/2 cups hot water
1 cup organic sugar (or honey)
1 tablespoon active dry yeast
1 tablespoon sea salt 3 eggs
1 tablespoon cardamom, whole decorticated
1 stick butter, melted 8-9 cups unbleached flour
Topping:
1 egg, beaten
pearl sugar to sprinkle on top (If this is not available at your grocery store, it may be found online, at World Market, or IKEA. Lars' Own is a brand imported from Sweden at IKEA.)

Into mixing bowl put milk, water, sugar, yeast, salt, and eggs.
Grind cardamom in spice or coffee grinder and stir into other liquid mixture. Mix until eggs are beaten.
Mix in the butter.
Add flour a cup at a time and mix well by either using a mixer with a dough hook or by using your hand and a spoon. The dough should gather into a ball, but it can remain sticky.
Cover dough with cloth, and put in a warm place to rise for one hour. After rising, pour out dough onto a lightly buttered counter or table top. With buttered hands, divide dough into three equal pieces (about 1½ pounds each). Form into loaves or braids (see below).
For braided pulla (nisu): Divide each piece into three parts. Form the 9 pieces into strands about 12 inches long and braid three strands together to end up with 3 loaves. Seal both ends and tuck under.
Place loaves on greased (or parchment papered) baking pan. Brush tops of loaves with beaten egg and sprinkle with pearl sugar. Let rise an additional 15-20 minutes in a warm place.
Bake at 400° for 30 minutes.

Dough can also be used to make cinnamon rolls or small fruit-filled buns. See directions on following pages to complete either of these items. Each loaf size makes about 2 small rols.
