Hoisin Beef With Coconut Rice

1 pkg - about 2 pounds ground beef

3/4 tsp baking soda

4 cloves garlic - minced or 1 heaping tsp powdered

1 inch grated fresh ginger or 1 heaping tsp powdered

6 Tbsps hoisin sauce

3 Tbsps soy sauce

1 Tbsp tomato paste

1 tsp sesame oil

1 tsp sugar pinch red pepper flakes

2 tsp coconut oil or avocado oil (subs. neutral vegetables oil)

1/2 onion thinly sliced into 1/2 moons

Rice

Can of coconut milk

Prepare the rice. Cook the rice as per the package directions but, substitute coconut milk for the water.

In a bowl, mix the beef with the baking soda - using your hands is the best method. Set aside on the counter for 15-20 minutes while you prepare the rest of the recipe.

Mix the sauce. Stir together the hoisin sauce, soy sauce, tomato paste, sesame oil, sugar, and red pepper flakes. Set aside.

In a preheated non-stick pan, add the 2 tsp of coconut oil and then the chopped onions, sauté until softened.

Add the ground beef and continue to cook until the beef is no longer pink and fully cooked.

Add the sauce and simmer for several minutes.

Serve with rice and top with sesame seeds and chives or chopped green onion.
