Baked Caesar Salmon

4 skinless salmon filets (about 6 ounces each), patted dry

salt and freshly ground black pepper, to taste

1/2 cup caesar salad dressing, divided

4 cups fresh broccoli florets

1 cup mozzarella cheese (sub gruyere for stronger flavor)

1/4 cup parmesan cheese

salt, pepper, red pepper flakes, italian seasoning blend (optional)

preheat the oven to 425°F. lightly coat a baking sheet with oil or line with parchment paper. season salmon with salt and pepper and set aside.

place broccoli on baking sheet and drizzle with olive oil. season with salt + pepper and toss to coat. nestle salmon into the broccoli and spread 1 - 2 tablespoons of caesar dressing over each filet. top broccoli and salmon with cheeses and any additional seasonings.

bake salmon 15-20 minutes, or until the salmon reaches an internal temperature of 130 to 145°F and cheeses are bubbly.

use a pastry brush or spoon to top each filet with the remaining caesar dressing, if desired.
