Classic Broccoli Salad

For the salad

6 cups fresh broccoli florets, cut into small bite-sized pieces

1/3 cup red onion, finely diced

1/2 cup dried cranberries

1/2 cup slivered or sliced almonds

1/2 cup shredded cheddar cheese (optional, but common in many versions)

4 slices cooked bacon, crumbled (optional)

For the dressing

3/4 cup mayonnaise

1 1/2 tablespoons apple cider vinegar

2 tablespoons sugar or honey

1/4 teaspoon salt

1/4 teaspoon black pepper

Prepare the broccoli

Wash and dry the broccoli well. Cut it into very small florets so it’s easier to eat and better coated in dressing.

Make the dressing

In a medium bowl, whisk together the mayonnaise, apple cider vinegar, sugar or honey, salt, and black pepper until smooth and creamy.

Assemble the salad

In a large bowl, combine the broccoli florets, red onion, dried cranberries, almonds, cheddar cheese if using, and bacon if using.

Toss everything together

Pour the dressing over the salad and toss well until everything is evenly coated.

Chill before serving

Cover and refrigerate for 20 to 30 minutes so the flavors blend and the broccoli softens slightly while staying crisp.

Serve

Give it a quick toss before serving. Taste and adjust with a little more vinegar for tang or a little more sweetener if needed.

Tips

Toast the almonds for extra flavor.

For a lighter version, replace part of the mayonnaise with plain Greek yogurt.

Add sunflower seeds for extra crunch.

If you prefer a softer onion flavor, soak the diced onion in cold water for 10 minutes, then drain well.
