Green Tortelloni With Crispy Breadcrumbs

  • 80g Croutons

  • 100g Spinach

  • 1 Garlic Clove

  • 3 Tbsp Crème Fraîche

  • ½ Lemon

  • 30g Parmesan or nooch

  • 250g La Famiglia Rana Cooked Ham & Mozzarella Tortelloni

  • Olive Oil

  • Salt

  • Pepper

Ohjeet

  1. Start by blitzing the croutons to a rough crumb in a food processor or pestle and mortar. Season with salt. Tip into a small frying pan with a dash of olive oil and a sprinkle of salt. Set over a medium heat and toast, stirring regularly until golden brown. Remove from the heat and set aside.

  2. Bring a pan of water to boil, add the spinach and garlic for 1 minute, remove from the water immediately, rinse with cold water and drain well. Add to a blender with crème fraîche, olive oil, lemon juice, and Parmesan. Blitz until completely smooth, then season with salt and pepper.

  3. Bring a large pot of water to the boil, then add in the tortelloni to cook for just 2 mins before draining, save some of the water! Add the green sauce to the pan along with the drained pasta and a slosh of pasta water, then mix well to combine.

  4. Portion into bowls and top with the breadcrumbs and a drizzle of oil.
