Celeriac au Gratin

1½ pounds celeriac (about 3 roots)
Salt and pepper
½ cup shredded process American cheese
1½ cups thin white sauce
¼ cup fine dry bread crumbs, mixed with 2 tablespoons melted butter

Cut off celeriac tops. Peel roots and dice.
Cook in 1 inch of boiling salted water for about 20 minutes, or until tender.
Drain and place in shallow casserole.
Mix cheese with hot white sauce until melted. Pour over celery roots and season to taste. Top with buttered crumbs and bake in preheated moderate oven (375°F.) for 20 minutes, or until browned.
