Spinach Feta Paratha (spanakopita)

If you’ve ever had the amazing Greek dish spanakopita, this is exactly that but in paratha form! It’s flaky, crispy, cheesy, and you get ur greens in too 🙌 it’s perfect on its own for breakfast or with eggs 🍳 The dough is so easy to make, recipe below 👇
Recipe:
2 cups all purpose flour
1 tsp salt
1 tbsp olive oil (I used @pompeian)
2/3-1 cup warm water
optional sesame seeds for crusting
Filling:
2 cups chopped spinach
1 stalk green onion
2 tbsp feta cheese
1/4 cup mozzarella
1/3 cup cottage cheese
salt, pepper, and garlic powder to taste
Ohjeet
Mix flour and salt, then drizzle in oil. Add water while mixing until a somewhat smooth dough forms. Let rest 30-1 hours. Cook spinach in microwave or stove until wilted. Let cool, then mix filling ingredients in bowl. Divide dough into 5, then roll out into a circle. Spread spinach filling and then place another dough on top and roll until flat. Pan fry paratha in oil until crispy on both sides.
