2 tablespoons olive oil

1 pound smoked sausage, sliced

1 medium onion, chopped

2 cloves garlic, minced

2 cups chicken broth

1 cup milk

8 oz bowtie pasta (farfalle)

1 cup shredded cheddar cheese

½ cup shredded mozzarella cheese

Salt and black pepper, to taste

1 teaspoon dried parsley (optional)

Heat olive oil in a large deep skillet over medium heat.

Add sliced smoked sausage and cook for 3–4 minutes until lightly browned. Remove excess grease if needed.

Stir in chopped onion and cook until softened, about 4 minutes. Add garlic and cook for 30 seconds.

Pour in chicken broth and milk. Stir well.

Add uncooked pasta. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.

Reduce heat to low and stir in cheddar and mozzarella cheese until melted and creamy.

Season with salt and black pepper to taste. Sprinkle with dried parsley if desired.

Serve warm.
