DGF Egg Bites

Preheat oven to 300.
Add your baking sheet into the oven with about 2 inches of water while it is preheating
8 eggs
1 cup cottage cheese
1 cup shredded cheese of choice
1 cup chopped frozen spinach salt & pepper to taste

In your blender, crack all the eggs and add the cottage cheese, salt and pepper. Combine on low for 10 seconds. Add half the cheese
Blend 5 more seconds Oil your muffin tin very well, pour in the egg mixture about 3/4 full, add approximately a tablespoon of the chopped spinach to each tin and top with the leftover cheese. Place your filled muffin tin on the baking sheet with water, centre rack Bake for 28 to 30 minutes. Let cool completely
