For the Chicken Marinade
6–8 boneless, skinless chicken thighs
Smoked paprika, to taste
Cayenne pepper, to taste
Dried oregano
Salt & black pepper
2–3 garlic cloves, finely minced
A generous handful of fresh cilantro, finely chopped
Juice of ½ lemon
Avocado oil
For the Cilantro Sauce
1 cup plain Greek yogurt
1 packed cup fresh cilantro (stems included)
Juice of ½ lemon
1 small garlic clove
Salt & pepper, to taste
1–2 tsp honey (optional)
For Serving
Green beans
Corn tortillas

Marinate the Chicken
In a bowl, combine smoked paprika, cayenne, dried oregano, salt, and black pepper.
Add garlic, chopped cilantro, lemon juice, and avocado oil.
Toss chicken thighs until evenly coated.
Cover and marinate for at least 30 minutes.
Bake the Chicken (Health-Conscious Method)
Note: The original Chicken with Cilantro Sauce recipe calls for pan-frying the chicken. This version is baked for a lighter option.
Preheat oven to 350°F (175°C).
Place marinated chicken thighs in a baking dish.
Bake for 35 minutes, or until cooked through.
Broil for the final 5 minutes to add color and crisp edges.
Remove from oven and let rest.
Make the Cilantro Sauce
Add Greek yogurt, cilantro, lemon juice, garlic, salt, pepper, and honey to a blender.
Blend until smooth and vibrant green.
Serve
Plate the baked chicken with cilantro sauce spooned over the top or on the side.
