For the Shrimp:
1 œ shrimp, peeled and deveined đ€
1 tbsp olive oil đ«
1 tbsp @spicexseasoning Daily Blend
For the Peanut Sauce:
1/4 cup peanut butter đ„
1 tbsp olive oil đ«
1 tbsp soy sauce
1 tbsp honey đŻ
1 tsp rice vinegar
2 teaspoon sriracha or chilli sauce đ¶ïž
2 garlic cloves đ§
1 tsp fresh ginger đ«
1 lime, juiced đđ©
Water, to thin (1-2 tbsp) đŠ
Ohjeet
Place everything in a measuring cup (or blender) and blend using an immersion blender. Set aside.
Additional ingredients:
100 grams cooked and cooled rice noodles đ
1.5 cups purple cabbage, sliced
2 small carrots, sliced đ„
2 mini cucumbers or a large one, đ„
1 small jalapeño, sliced
1 avocado, sliced (optional) đ„
1/4 cup green onions, chopped
1/4 cup cilantro, chopped đż
1/4 cup mint, chopped đż
1/2 cup chopped Peanuts (optional) đ„
Method : Assemble, mix & enjoy! Stores perfect in the fridge for meal prep and even better the next day! Can be eaten cold too âïž
