Italian Ricotta Olive Oil Cake

2 lemons for zesting

¼ cup lemon juice

1 1/3 cups granulated sugar

½ cup extra virgin olive oil

3 eggs

1 cup smooth ricotta cheese

2 cups all purpose flour

2 tsp baking powder

½ tsp baking soda

¼ tsp salt

Glaze

½ cup icing sugar

2 tbsp lemon juice

Ohjeet

Zest 2 lemons into a large bowl. Squeeze enough juice to make ¼ cup.

Add sugar, oil, eggs and ricotta cheese and whisk until smooth.

Add flour, baking powder, baking soda and salt and whisk until all is combined.  Pour into a 9” springform pan sprayed with vegetable spray.

Bake at 350 F for about 30 – 35 minutes or just until tester comes out just dry, do not overbake.

Poke holes with a toothpick all around warm cake.

Mix icing sugar and lemon juice together and drizzle over top cake. Enjoy!
