Boursin Cheese Orzo Pasta Bake

2 cups orzo

1/2 cup sun dried tomatoes, chopped

1 round of boursin garlic/herb cheese

4 cups chicken broth

1 tbsp minced garlic

Oregano and red pepper flakes (measure w/ your heart)

2 cups spinach

1/2 cup heavy cream (optional)

parmesan cheese for topping (optional)

Protein of your choice (I used chicken sausage)

Preheat oven to 425 degrees. Place boursin to center of an oven safe baking dish, such as a Dutch oven. Add orzo, sun dried tomatoes, red pepper flakes, oregano and garlic (see picture 2 for example) add chicken broth and cover with lid. Bake for 30 minutes.

While orzo is baking, prepare your protein. I sliced chicken sausage and browned it on a pan but chicken is also a good option!

When orzo is finished, add your heavy cream, spinach and parmesan cheese. Allow to sit for a minute until spinach is softened and then serve!
