Broiled Feta + Hot Pepper Relish

1 small banana pepper, seeded and chopped
1 orange bell pepper, cored, seeded, and chopped
½ poblano chile, seeds and ribs removed, chopped
1 serrano or habanero chile, seeds and ribs removed, chopped
1 garlic clove
⅓ cup sun-dried tomatoes, drained
½ teaspoon kosher salt
1 tablespoon olive oil
One 6-ounce brick feta cheese, drained and patted dry
Toasted baguette slices or crackers, for serving

1. Put the peppers, chiles, garlic, tomatoes, and salt in a food processor. Pulse until finely chopped.
2. Heat the oil in a small skillet over medium heat. Add the pepper-chile mixture and cook until every-
thing is tender, about 5 minutes.
3. Spread the mixture in a small casserole, covering the bottom. Center the cheese on top. Position a rack in the broiler sufficiently below the heat source to accommodate the casserole. Turn on the broiler, to high if you have that option. Broil until the cheese is brown on top and the pepper-chile mixture is slightly charred, about 5 minutes. Serve immediately, with the bread on the side.
