Grandpa's Stuffed Pork Loin

Saute 5min
2 T olive oil
1 1/2 cups chopped apples (Golden Delicious Apples)
1 cup chopped onion
1/2 cup chopped celery
Add and boil 5-10min or until cider is absorbed
1/2 cup dried apricots (chopped)
1/4 cup raisins
1/2 cup apple cider
1/2 teas. Dried thyme
Salt and pepper
Sauce (after baked)
Pan drippings
1 cup cider
1/2 cup red apples
1 chicken bouillon
Corn starch to thicken
Ohjeet
COOL (first two parts of ingredient blocks)
Butterfly loin until flat
Spoon on dressing, close and tie with string
Add 1/2 cup cider to pan
Bake at 375F for about 2 1/4 hours
Cover tightly and bake 30min more

Add a few more raisins and a little more apricots for grandpa's recommendation.
