Healthier Copycat Taco Bell Burritos

1/2 red onion
1 cup assorted bell peppers, diced
1 lb ground chicken
1 pkg @sietefoods spicy taco seasoning
Black beans, warmed
Shredded lettuce
1 avocado
Zest of 1/ lemon
Juice of 1 lemon
A bunch of fresh cilantro
Seasonings: @maldonsalt , pepper, @primalkitchenfoods avocado oil

Sauté bell pepper and onion in avocado oil until onion is translucent
In the same pan, add in ground chicken and mince
Once chicken is cooked, add in taco seasoning as instructed
In a bowl, mash avocado, then add in lime zest, juice, salt and pepper
Layer burrito, starting with meat, rice, black beans, lettuce, cottage cheese, avocado mash, then chipotle sauce
Roll into burrito, then brown on both sides in avocado oil
Serve with additional chipotle sauce
