Scandinavian Almond Bars

Cookie

  • 413g flour

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 2 sticks butter softened

  • 2 eggs

  • 1 tsp almond extract

  • 5oz almonds

  • 14oz sugar

Icing

  • 1 cup powdered sugar

  • 1 tsp almond extract

  • 2 tbsp milk

Preheat oven to 350F.

Cream butter and sugar. Add eggs, extract, and cream some more. Mix flour, baking powder, and salt and add to the creamed mixture.

Divide into 8 rolls. Place each roll (2 at a time) 4-5" apart on parchment lined cookie sheet. Flatten until 12in by 3in. Repeat with other rolls (refrigerate the dough for 30ish minutes if it becomes hard to work with).

Brush rolls with milk and sprinkle with almonds. Bake in 350F for 12 minutes or until edges are very lightly browned. While still warm, cut crosswise at a diagonal 1" strips. Cool on rack and drizzle with icing.

Icing

  • Mix all ingredients together until drizzling consistency.
