2 chicken breasts sliced into 3 pieces
1 cup AP flour mixed with 1Tbsp salt & 1tsp Black pepper
3 eggs whisked
EVOO for frying
2/3 cup white wine
1 ½ cups chicken stock
Juice 2 lemons
3Tbsp butter cubed & coated in 1.5Tbsp AP flour
Chopped parsley
Lemon slices for garnish
Pound chicken breasts
Coat in egg, then into flour. Wait 3 minutes then straight into a good amount of EVOO over medium heat
Cook chicken on both sides until golden brown, remove from pan
Wipe out excess frying oil
Ohjeet
Add white wine, simmer for 5 minutes
Add chicken stock and reduce by 1/4
Add lemon, simmer for 5 minutes
Add coated butter and whisk until completely emulsified
Reduce to desired consistency
Season with salt to taste
Add parsley and chicken, coat with sauce
Simmer 5 minutes. Serve on lemon slices and with pasta if desired
