1 tablespoon of dry active yeast 1 tablespoon of sugar 500 ml of water (start with 400ml, depending on the quality of the flour this may be enough) 575g of wheat flour 1/2 teaspoon of regular or pink salt 4 tablespoons of olive oil Preparation:

Mix everything together (except the olive oil) and let it rest for 30 minutes. Add the olive oil after the first fold (after 30 minutes). And let it rest for another 30 minutes. Make the second fold after another 30 minutes of resting. Make the third fold and let it rest for another 30 minutes. Totaling 2 hours. Shape and let it rest for 15 minutes. Bake at 200°C for approximately 20 minutes with a baking sheet filled with ice. The time will also depend on your oven. Note: you can let it rest longer if you want, it's even better to let it rest for at least 4 hours. Sometimes I let it rest overnight in the refrigerator and bake it in the morning.
