Honey Lime Chicken & Avocado Rice Stack

For the Chicken
2 chicken breasts, sliced
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) honey
2 tbsp (30 ml) lime juice
2 cloves garlic, minced
½ tsp salt
½ tsp black pepper
For the Rice
1 cup (200 g) cooked rice
1 tbsp (15 ml) lime juice
1 tsp lime zest
½ tsp salt
For the Avocado Layer
1 large avocado, sliced
1 tbsp (15 ml) lime juice
Pinch of salt
Garnish
Fresh cilantro
Lime wedges
Cracked black pepper

In a bowl, mix honey, lime juice, garlic, salt, and black pepper. Toss chicken in the marinade and let sit for at least 15 minutes.
Heat olive oil in a skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through, brushing with extra marinade for a glossy finish.
In a bowl, mix cooked rice with lime juice, zest, and salt.
Toss avocado slices with lime juice and a pinch of salt.
To assemble, place rice as the base, layer avocado slices, then top with honey lime chicken.
Drizzle any remaining sauce over the stack.
Garnish with fresh cilantro, lime wedges, and cracked black pepper.
Serve immediately.
