Queso Dip

4 lbs (make half)

1 lb Sharp Cheddar Cheese

1 lb Colby Cheese

1 lb American Cheese Slices

1½ sticks Butter

1 Onion

Pinch of Salt

5 Garlic cloves

4 Green Chilis

4 Roma Tomatoes

32 oz Milk (4 cups)

Ohjeet

Smoke Cheddar & Jack cheese until they are a little melty.

In a large pot, melt butter.

Add Onions, Green Chilis, Tomatoes and a heavy pinch of salt. Cook down.

Add garlic and cook for a minute or two.

Add Milk and American Cheese and heat on low until cheese has melted. Start with half the milk, add more later if it’s not runny enough. The American Cheese is for sodium citrate to keep the queso from breaking.

Add smoked Cheddar and Colby. Heat through until thoroughly melted.

Optionally, use a stick blender at this point to make a smooth queso.

Top with some scoops of guacamole in a bowl if desired.
