Brown’s Bites

An Easy 20 Minute Dinner That I Always Come Back to

1 lb Italian sausage

1 tbsp olive oil

1 bunch broccolini, chopped

2–3 cloves garlic, minced

12 oz cavatelli pasta

2 tbsp butter

½ cup reserved pasta water

¼–½ cup beef bone broth

½ cup freshly grated Parmesan cheese, plus more for topping

Salt & black pepper, to taste

Bring a large pot of salted water to a boil and cook the cavatelli according to package directions. Reserve about ½ cup of pasta water before draining.

While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the Italian sausage and cook until browned and fully cooked through, breaking it apart as it cooks. Remove from the pan and set aside.

In the same skillet, add the chopped broccolini and sauté for 3–4 minutes until tender-crisp. Remove and set aside with the sausage.

Add the minced garlic to the skillet and cook for about 30 seconds, until fragrant. Stir in the butter.

Add the drained cavatelli directly to the skillet and toss to coat in the garlic butter. Return the sausage and broccolini to the pan and mix well.

Pour in a splash of reserved pasta water and beef bone broth to loosen the sauce. Let everything simmer together for 1–2 minutes.

Stir in freshly grated Parmesan until melted and creamy. Season with salt and black pepper to taste.

Serve warm and top with extra Parmesan.
